Buyer FAQ
Ripe red pepper berries are soaked (retted) in water until the outer fruit softens and washes away, leaving the seed, which is sun-dried pale — hence the milder, cleaner-tasting spice.
Over-retting in dirty water gives harsh off-notes. We quote clean-retted, low-taint lots and can specify water source and drying practice per origin.
