What Is Hibiscus?

What's sold as “hibiscus” in the spice and beverage trade is actually the dried calyx — the fleshy part that surrounds the flower's base — of Hibiscus sabdariffa, also called Roselle. It's harvested, separated from the seed pod, and sun-dried until deep red and papery. Nigeria is one of the world's largest producers, and the dried calyces are the base ingredient for teas, natural food coloring and traditional beverages across West Africa, the Middle East and Latin America.
