What Is Cloves?

Cloves come from Syzygium aromaticum, an evergreen tree native to the Maluku Islands of Indonesia, historically called the “Spice Islands.” The unopened flower buds are hand-picked, then sun-dried until they turn the familiar dark brown. Indonesia remains the single largest grower, though Madagascar, Comoros and Sri Lanka each produce cloves with subtly different oil content and flavor intensity — which is why origin matters when sourcing for a specific use case.
